Ingredients delivered per portion
- 150 gr pappardelle
- 1 tablespoon extra virgin olive oil
- 42 gr bacon strips
- 63 gr white and brown mushrooms
- 1 thyme branch
- 1 garlic clove crushed
- 1 free range egg
- 55 ml fresh cream
- 10 gr parmesan grinded
- 30 ml water for sauce – not included
- salt / pepper as desired – Not included

- Cut the mushrooms into slices and remove leaves from thyme branch.
- Separate the yolk from the egg white and keep the egg yolk.
- Boil water in a pot. Place the fresh pappardelle and cook for 12 minutes.
- At the same time, in a saucepan or large non-stick pot heat the olive oil in medium heat and then add the bacon strips. Cook for about 3 minutes.
- Add mushrooms, thyme leaves, garlic and salt and pepper and cook for another 3 minutes stirring frequently. Add the fresh cream, water, egg yolk and cook for another 2-3 minutes while stirring.
- Drain the cooked pappardelle and add in the sauce. Stir well.
- Finally, serve pappardelle and sprinkle with parmesan cheese.
