25΄ Chicken Salad With Chilli & Coconut Milk per person -Gluten Free

A combination of chicken fillet with greens.  The addition of bacon, chilli  mixture and coconut milk dressing will make it really gourmet and yet so easy to prepare.

Ingredients delivered per portion

  1. 180 g fresh chicken fillet
  2. 50 g baby spinach
  3. 5 ml vegetable oil
  4. 60 g bacon
  5. 75 g green beans
  6. Chilli mixture: Chili seeds removed, lime rind, sugar
  7. Coconut milk dressing: Chilli, coconut milk, fresh coriander, lime juice
  8. Salt and pepper as desired – not included

Ingredients: baby spinach, fresh green beans ,vegetable oil, bacon, fresh chicken fillet 51%, chilli mixture (chili seeds removed 0.66%, lime rind, sugar), coconut milk dressing (chilli 11.16%, coconut milk, fresh coriander, lime juice).

Preparing a meal is now as easy as 1-2-3!

Ready in 25 minutes
  1. Boil water in a kettle and pour in a non-stick pot. Add the green beans, salt and pepper and cook in medium heat lid open for 15 minutes. Strain.
  2. At the same time, in a non-stick pan add the vegetable oil and chilli mixture. Sauté in medium heat for 2 minutes stirring often. 
  3. Add chicken and cook each side for 5 minutes.
  4.  Remove chicken and place on a chopping board. Cut vertically into 1 cm slices using a sharp kitchen knife.
  5. Clean frying pan with kitchen paper and add bacon. Cook each side for 2 minutes in medium heat. 
  6. Remove bacon and place on the chopping board. Cut into thin slices.
  7. In a bowl, add spinach, green beans and bacon. Add ¾ of the coconut milk dressing and mix well.
  8. Finally, first serve vegetable salad just made and top with the chicken. Pour remaining dressing all over.

Utensils you will need: 1 non-stick pot, 1 non-stick frying pan, 1 chopping board, 1 strainer and 1 bowl
