Ingredients delivered per person
- 150 g wholewheat noodles
- 10 ml peanut oil
- soy sauce: low fat soy sauce, sugar, lemon juice, sweet and sour sauce
- nuts mixture: raw peanuts, cashew nuts, raisins
- vegetable mixture: fresh onion, bean sprouts
- fresh chopped coriander
- 30 g canned beetroot

Ready in 15 minutes
- Boil water in a pot and add noodles. Cook for 3 minutes in medium heat.
- In a non-stick pot or wok heat the oil, add the nut mixture and cook for 2-3 minutes in medium heat, stirring often.
- Add the soy sauce and stir for 1 more minute.
- Add the beetroot and cook for 1 more minute, stirring often.
- Add the vegetable mixture and stir for 1 minute, for one serving and more for more servings.
- Drain the noodles well and add them to the sauce. Stir for 1 minute.
- Finally, serve and sprinkle with coriander.
