A really low calorie and low fat meal so easy to prepare in the oven.  The marinated fresh chicken fillet gives it a great taste.  That combined with the baked mixed vegetables and side salad make it a complete guilt free solution for those on diet or who want to go light.

Ingredients delivered per person

  1. a 200 g fresh chicken fillet on skewers, 1 b. margination: garlic powder, paprika, strained low fat yoghurt, salt and black pepper
  2. 65 g baby potatoes
  3. olive oil mixture: extra virgin olive oil, garlic powder, salt and black pepper
  4. vegetables mixture: red onion in cubes, orange bell peppers in cubes, yellow bell peppers in cubes, red bell peppers in cubes, zucchini in cubes
  5. 10 leaves of fresh rosemary
  6. 35 g side salad: mixed lettuce, Florini’s peppers
  7. 10 ml side salad dressing: extra virgin olive oil, yellow mustard, honey, salt and black pepper

Preparing a meal is now as easy as 1-2-3!

Ready in 25 minutes

  1. Place the marination on a plate. Add the chicken skewers, one at a time and rotate until its fully marinated. Set aside.
  2. Preheat oven to 200 degrees at fan mode.
  3. Chop potatoes in quarters or in 6 depending on their size.
  4. In a non-stick oven proof pan, add potatoes and vegetable mixture. Add olive oil mixture, rosemary and mix well.
  5. Add chicken and bake in the middle oven tray for 8 minutes. Turn chicken and bake for another 8 minutes. For more portions, separate vegetables from chicken using two non-stick pans and place chicken in the middle oven tray and vegetables below. 
  6. Mix side salad with salad dressing.
  7. Serve chicken skewers next to the baked vegetables and salad.
