3 free range eggs
50 g cottage cheese
vegetable mixture: broccoli, red pepper, red onion, parsley
spice mixture: dry oregano, salt, and black pepper

Ready in 15 minutes
Preheat the oven to 200 degrees at fan mode.
Break the eggs in a bowl. Beat them lightly with a fork.
Add the olive oil mixture, the vegetable mixture, the spice mixture and the cheese. Stir thoroughly.
Place the mixture in an oven proof non-stick frying pan or a non-stick 15cm by 15cm pan for one serving, and in a bigger utensil for more servings. Place it in the oven's middle grill and cook for 10 minutes.
Serve using a kitchen spatula.
