120 gr breaded fresh chicken filled: tortilla chips, egg, flour, salt and pepper
160 gr potatoes: baby potatoes and sweet potato
5 ml extra virgin olive oil
80 gr vegetables mixture: carrot, white and red cabbage
sauce: mayonnaise, salt and pepper
salt / pepper as you like – not included

Ready in 30 minutes
Preheat oven to 200 degrees at fan mode.
Line a pan with baking paper and place chicken.
Peel and cut baby potatoes and sweet potatoes into 2 cm cubes. Place in a non-stick pan and brush with olive oil, salt and pepper.
Put both pans in the oven with chicken on the middle tray and the potatoes in the one below. Bake for 20-25 minutes carefully turning chicken half way.
In a bowl, mix veg mixture with sauce.
Serve chicken alongside the potatoes and vegetables.
