- 160 gr potatoes: baby potatoes and sweet potato
- 5 ml extra virgin olive oil
- 80 gr vegetables mixture: carrot, white and red cabbage
- sauce: mayonnaise, salt and pepper

Ready in 30 minutes
- Preheat oven to 200 degrees at fan mode.
- Line a pan with baking paper and place chicken.
- Peel and cut baby potatoes and sweet potatoes into 2 cm cubes. Place in a non-stick pan and brush with olive oil, salt and pepper.
- Put both pans in the oven with chicken on the middle tray and the potatoes in the one below. Bake for 20-25 minutes carefully turning chicken half way.
- In a bowl, mix veg mixture with sauce.
- Serve chicken alongside the potatoes and vegetables.
